This sauce is prepared on order by the chef
A blue cheese sauce, in Italy, is mainly Gorgonzola cheese sauce.
There are so many blue cheeses in Italy though. Even more than one per region.
This one is called Erborinato Sardo and comes from Sardinia.
Made using pasteurised sheep’s milk.
This cheese will give a soft and strong cheesy taste to the sauce that the chef
recommend with his gnocchi, although any pasta would be fine.
Portion is of 150g
Pour in a pan, add little ladle of boiling water used to boil/cook the pasta, and warm up.
Once pasta is cooked, pour the pasta in the pan of the sauce and stir gently.
Serve piping hot adding some grated cheese if requested.
