Chocolate mousse is prepared on order by the chef

The simplest but nicest chocolate desserts of all. Chef’s version come with a gelée of “Barolo chinato” a pinch of salt and fresh raspberries.

Barolo Chinato is an aromatised wine, such as vermouth, made by adding a maceration of herbs and spices to Barolo DOCG. It was invented in the late 1800s.
